Chocolate Protein Truffles

Chocolate Protein Truffles

RECIPES | THE SIMPLY JOURNAL

A little chocolate, a little coconut, and a little extra protein.

These no-bake chocolate protein balls are made with creamy peanut butter, oat flour, chocolate whey protein, and a hint of vanilla, finished with a delicate coating of shredded coconut.

Rich, chocolatey, and just the right amount of sweet. Perfect for an afternoon snack, a post-workout bite, or something to keep in the fridge for when you're craving a little treat.

Simple ingredients. Five minutes of mixing. No oven required.

Ingredients

Makes 14 mini protein balls

  • ¾ cup oat flour

  • ½ cup Simply Chocolate Whey Protein

  • ⅓ cup creamy peanut butter

  • ¼ cup almond milk (plus more if needed)

  • 1 tbsp unsweetened cocoa powder

  • 1 tsp vanilla extract

  • Pinch of salt

  • 4 tbsp shredded coconut, for coating

How to Make

01 / Combine

In a mixing bowl, combine the oat flour, chocolate whey protein, cocoa powder, and a pinch of salt.

02 / Mix

Add the peanut butter, almond milk, and vanilla extract. Stir until a soft, dough-like mixture forms.

Start with ¼ cup almond milk, adding a little more if needed to bring everything together.

03 / Rest

Let the mixture sit for 5 minutes to allow the oat flour to absorb the liquid. This helps create the perfect consistency for rolling.

04 / Roll

Using your hands, divide the mixture into 14 small balls. Roll each one in shredded coconut until lightly coated.

05 / Enjoy

Enjoy immediately, or refrigerate until chilled and slightly firmer.

A little something extra.

Make a batch at the beginning of the week and keep them in the fridge for an easy, chocolatey snack whenever you need one.
